Lemon Roast Chicken & Blackberry Salsa
grab the extra large bucket of blackberries at the farmers market this weekend, this dish is make ahead, no fuss and totally surprising...beginner level
I have (a few) food rules, but the “no fruit in my savory dishes” rule is pretty strong. Take Tomatoes and peaches out of that, but I will say no to a mango chutney 10 days a week. Pineapple on pizza, absolute heresy.
So when I sat staring at a giant basket of blackberries I bought at the farmers market, I have no idea how “salsa” got into my head. But it did and the results were amazing. I would suggest wild and in season blackberries if you can get yours hands on them. The more tart the blackberry the better for this recipe. Nothing fancy here, just new flavors that REALLY belonged together
I had a hankering for a juicy roast chicken in the moment, so I took my other new discovery LEMON SALT and covered my spatchcocked chicken with all of it and cooked it on 400 F until the thigh hit 165 internal.
