Even though I thought the Japanese inspired by the West (America), it turns out this dish was taken from a Russian dish. Nonetheless, its one of my favorite of all times potato salads.
The Yukon potato provides creaminess, the rice vinegar and Kewpie mayo brings the zing. Me? I keep it simple and use my food processor to keep it simple
INGREDIENTS
2 lbs of Yukon Potatoes
2 carrots|
1 seedless cucumbers
.5 red onion
Kewpie Mayo (to taste)
2 tbsp rice wine vinegar
PROCESS
Peel & Boil potatoes
Cool & Smash
Slice carrots, thin
Slice cucumbers, thin
Salt the cucumbers , let sit and squeeze liquid off
Slice red onion, half moons, thin
Add Kewpie, rice vinegar, S&P to taste
